Vegan Mapo Tofu Recipe: Spicy Comfort Food
Difficulty MediumOne of my favorite Chinese dishes to eat is Mapo Tofu. I love the tongue-numbing features of the Szechuan peppercorns, the depth of chili flavors in the sauce, and the texture of the soft tofu that perfectly absorbs the sultry sauce. There are only a few restaurants I have been to that do Mapo Tofu excellently. I have been disappointed with most so I set out to make one of my favorite Chinese dishes from the Szechuan province. You can make this as mild or spicy as you prefer!

Difficulty MediumBeing half Hungarian I grew up eating a lot of paprika and dill, so I find these flavors extremely comforting. Dill and paprika go so well with one of my favorite veggies, mushrooms! All that umami with herbaceous notes and spice is a dream come true! Unfortunately, a lot of Hungarian food has meat/sour cream/general dairy in it and since I don’t cook with dairy, I wanted to veganize this classic, cozy dish.
